Rustic strawberry, raspberry, apple & cinnamon galette

Portions:
8
Preparation:
20 minutes
Cooking:
25 minutes

Ingredients

  • 1 cup Quebec strawberries, cut in 2
  • 1 cup Quebec raspberries
  • 1 tablespoon sugar
  • 1 tbsp. cornstarch
  • 1 sheet of homemade or store-bought shortcrust pastry
  • ½ teaspoon ground cinnamon
  • 1 Québec Quality apple, sliced
  • 1 tbsp. butter, melted
  • 1 tablespoon turbinado sugar (or white sugar)

Preparation

  1. Preheat oven to 400°F and line a baking sheet with non-stick silicone. Set aside for later use.
  2. Place strawberries, raspberries, sugar and cornstarch in a medium-sized bowl, stir, then let stand for 5 minutes.
  3. Roll out the shortcrust pastry into a large circle (it doesn't have to be perfect, we're going for a pretty rustic look!). Carefully place the dough on the prepared baking sheet and sprinkle with cinnamon.
  4. Leaving a 2- to 3-inch border of pastry to fold over, place the apple slices in a circle. Place the strawberries and raspberries inside the circle.
  5. Secure the fruit by folding the excess pastry towards the inside of the galette.
  6. Brush the dough with melted butter and sprinkle with turbinado sugar.
  7. Place in the oven for 25 to 30 minutes, or until golden brown. Let cool for a few minutes before cutting into wedges and serving.
