Ingredients
2 Exceldor chicken breasts, diced
2 to 3 apples (Pommes Qualité Québec certified)
2 stalks of celery, finely diced
1 French shallot, minced
Alfalfa sprouts
Chopped chives
Sauce
1/4 cup mayonnaise
1/2 cup Greek yogurt
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon white sugar
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon paprika
Preparation
1. Dice an apple and mix it with the chicken, celery, and shallot.
2. Mix the ingredients for the sauce.
3. Stir the sauce into the chicken mixture.
4. Slice the remaining apples into rounds.
5. Top the apple slices with the chicken salad, alfalfa sprouts, and chives.
