Turkey breast stuffed with almonds and apples, spice sauce

Ingredients

  • 1 kg (2.2 lb) boneless turkey breast
  • 300 g (¾ lb) ground turkey or other poultry
  • 125 ml (½ cup) whole almonds
  • 2 Cortland apples, cut into 1 cm cubes
  • 125 ml (½ cup) brown sugar
  • 60 ml (4 tablespoons) butter
  • 250 ml (1 cup) homemade or commercial chicken broth
  • 250 ml (1 cup) 15% country-style cream
  • 125 ml (½ cup) honey
  • 5 ml (1 teaspoon) nutmeg
  • 5 ml (1 teaspoon) cinnamon
  • Salt and pepper to taste

Preparation

  1. Blanch the apples in the butter and brown sugar, then chill in the fridge for 10 minutes.
  2. Combine ground meat, apples, salt and pepper.
  3. Make a full-length incision in the center of the breast, without piercing the flesh on either side.
  4. Arrange the whole almonds to cover as much of the surface as possible.
  5. Fill the breast with the apple mixture, packing as much as possible.
  6. Close tightly, season with salt and pepper, then place on a buttered dish.
  7. Cover and bake in a hot oven at 180°C (350°F) for 1? hours. Time may vary according to the weight of the brisket; allow approximately 30-35 minutes per pound. Remove cover and finish baking at 220°C (425°F) for 15 minutes.
  8. For the sauce, combine remaining ingredients and bring to a boil. Continue over medium-high heat for about 10 minutes. The sauce should coat the back of a spoon. Slice turkey and top with sauce.
