Apple fritters

Ingredients

  • 180 ml (3/4 cup) flour
  • 1 egg
  • 30 ml (2 tablespoons) sugar
  • a pinch of salt
  • sufficient milk
  • 125 ml (1/2 cup) blueberry or raspberry jam
  • 50 ml (1/4 cup) dry white wine
  • 4 apples, peeled and sliced 2 to 3 mm (1/8 in.) thick
  • sufficient oil for frying

Preparation

  1. In a bowl, combine flour, egg, sugar, salt and milk to make a liquid batter.
  2. In a saucepan, heat the blueberry jam with the white wine and simmer for 2 minutes. Leave to cool.
  3. Dip apple slices in batter, then fry in boiling oil.
  4. Once the apple fritters are golden brown, drain well and serve with the blueberry sauce.

Tips and tricks

For fluffy fritters, choose crispy, slightly tart Quebec apples like Cortland orEmpire. They'll hold up well to baking without making the dough soggy.

For an even lighter dough, replace some of the milk with sparkling water or lager. The bubbles will help create an airy texture.

Before plunging the fritters into the oil, check that the temperature is just right (around 180°C/350°F). Oil that's too cold will soak the doughnuts; too hot will burn them without cooking the interior.

Always drain fritters on paper towels as soon as they come out of the fryer to remove excess oil and preserve their crispiness.

For extra indulgence, roll them while still warm in a mixture of sugar and cinnamon, or dust them lightly with powdered sugar.
