Spring mocktail with apple peel infusion

Celebrate the arrival of spring with our refreshing Quebec apple peel infusion mocktail! Light, sparkling and delicately scented, this mocktail is the ideal way to make the most of fine weather. Easy to make and quick to prepare, it showcases local apples in an original, eco-friendly way, using their peels. This recipe will seduce you with its harmonious, natural flavors.

Ingredients

  • 4 Québec apples (peels only)
  • 2 cups water
  • 2 tbsp. maple syrup
  • 1 cinnamon stick
  • 1 tsp. lemon juice

Preparation

In a small saucepan, bring the peels, water, maple syrup, cinnamon and lemon juice to the boil. Reduce heat and simmer for 5 minutes. Remove from heat, cover and infuse for at least 45 minutes (or until cool). Strain the infusion and assemble the mocktails.

Mocktail assembly (for 1 glass):

  • ½ cup apple infusion, cooled
  • ½ cup plain sparkling water
  • Ice cubes
  • A few slices of apple
  • A few fresh mint leaves (optional)

Place ice cubes, apple slices and mint in a tall glass. Pour in ½ cup apple infusion, then ½ cup sparkling water. Stir gently and serve.
